Frozen Yogurt and Berry Granola Cups
100 g (4/5 cup) granola
1 tbsp virgin coconut oil (melted)
400 ml (1 3/5 cup) berry yogurt or 200 g (7 oz) berries
200 ml (4/5 cup) plain yoghurt
50 g (1 4/5 oz) berries of your choice
Line a muffin tin with 6 muffin liners. Crush the granola lightly with a mortar and pestle or in a plastic bag with a rolling pin to break up the biggest chunks. Combine 4/5 of the granola (80 g / 3 oz) with the melted coconut oil in a bowl, mix well and spread the granola mixture in the bottom of the liners, about one heaped tablespoon in each. If you are using fresh berries blitz them with yoghurt in a jug using an immersion blender. Taste and add sweetener of your choice, if so desired. Spoon the yogurt over the granola. Top with berries and a sprinkling of the remaining granola. Press the granola slightly into the yogurt so that it stays on when removing the desserts from the tin. Place the yoghurt and berry cups in the freezer for at least two hours. Remove from freezer to soften slightly 10 minutes prior to serving, or 15 minutes if your freezer keeps a very low temperature.
This quick and healthy dessert is really refreshing and so easy that even the kids can make it. It is very versatile as it can be made with just about any berries, chopped up fruit, or why not coconut. Change the flavour of the yoghurt and the granola as well. Cinnamon granola is great for this dish, but avoid types with a lot of dried fruit as the fruit tends to get chewy when frozen. The yogurt cups can be made with gluten free granola, or soy yoghurt for vegans or those with lactose intolerance.
